
Crepes with lingonberry sauce
Description
Delicious baked goods for the whole family. With this recipe you can make thin pancakes with water, milk, or any fermented dairy product. The pancakes turn out tender, thin, and very tasty! The sauce, by the way, doesn’t have to be made only from lingonberries—use any seasonal berries you like, fresh or frozen. Adjust the sugar in the sauce depending on whether your berries are sweet or slightly tart. Otherwise the quantities of all the other ingredients stay the same. Serve cooled or slightly warm.

Prepare all ingredients.

In a deep bowl or small saucepan combine all the ingredients for pancakes: milk (I use whey), eggs, sugar, salt, baking soda, oil, and flour.

Beat everything with a mixer or blender until smooth. The dough is ready.

In another small saucepan or sauté pan, place the rinsed lingonberries (I used frozen).

Add water and sugar to the lingonberries. Put the pan on the heat and cook the sauce, stirring, for 5–7 minutes. Keep the heat low.

Then remove from the heat and add the lemon juice. Purée the berries with an immersion blender until smooth.

Pour the sauce into a gravy boat and leave until cooled.

Bake pancakes from ready-made dough.

Arrange the blini on plates and drizzle with lingonberry sauce.
