Leningrad-Style Pancakes
Description
Pancakes made with this recipe are real crowd‑pleasers. Because they’re made with kefir, they turn out tender, lacy, and airy. You can serve Leningrad-style pancakes on their own or with any filling. For sweeter pancakes, add more sugar. Serve cooled or slightly warm.

Whisk the eggs with salt and sugar.

Step 4

Add the flour in portions. I gave the amount of flour as stated in the original recipe. I ended up needing no more than 4–5 tablespoons. That can depend both on egg size and on how fatty the kefir is, so judge by how thick your batter is. The main thing is that the dough stays crepe‑like—that is, a semi‑liquid consistency.
