1. Prepare the ingredients for the pancakes. Butter is only needed for brushing the finished pancakes. Use ryazhenka with the lowest fat content — it will be thinner that way.

2. Take a deep, roomy bowl and mix the ryazhenka with the eggs and sugar in it, along with a pinch of salt.

3. Add wheat flour and leavening agent. Beat the dough thoroughly with a whisk.

4. The dough should be quite thick; the main thing is to beat it thoroughly so no lumps remain.

5. Gradually pour in a glass of vigorously boiling water in a thin stream, while quickly whisking the batter with your other hand so it does not lump up. The batter will become thin and smooth. Add a couple of spoonfuls of odorless vegetable oil, mix, and proceed to frying.

6. Heat the pan well and grease it with a silicone brush. Pour the batter evenly and fry.
