
Pancakes with brine
Description
Perfectly pairs with tea and coffee. It's best to use brine from salted cucumbers rather than pickled ones. I used a 24 cm frying pan for cooking, which resulted in fairly large pancakes. These pancakes can even be served alongside a bowl of hot soup instead of a slice of bread. They can be served with tea or coffee.

Prepare all ingredients in advance for cooking.

Sift the flour into a large bowl.

Pour the cucumber brine, 2 tbsp of vegetable oil, and warm water into the sifted flour.

Mix these ingredients with a whisk until a smooth batter forms.

In a separate bowl, crack the eggs and whisk them with a whisk until a homogeneous mixture is obtained.

Into the bowl with the dough, pour the beaten eggs, add starch, baking soda (do not neutralize), and sugar.

Mix all these ingredients with a whisk until a smooth pancake batter is obtained.

Grease the pan with vegetable oil using a silicone cooking brush and heat over medium heat. Pour a portion of batter onto the heated pan using a ladle, spreading it to form a pancake across the entire surface of the pan by slightly tilting the pan from side to side in your hands.

Fry the pancake on both sides until golden brown.
