
Pancakes made with sour milk, thin with holes
Description
Delicious baked goods for the whole family. Pancakes made with sour milk can be served with sweet fillings as well as with meat, vegetable, or cheese fillings. Serve the pancakes hot, straight from the pan, with sour cream, honey, jam, or fruit and berry syrups. It's best to whisk the sour milk made from farmhouse milk until smooth, to avoid lumps.

Prepare all the ingredients. The buttermilk and eggs should be at room temperature. Boil water.

Beat the eggs in a deep bowl, whisking them with sugar and salt until a light foam forms.

Pour in the sour milk, add the baking soda, and beat vigorously until bubbles appear—this indicates the baking soda is activating. Add boiling water and mix again.

Add the required amount of flour and continue beating.

Let the dough rest for about 5 minutes before baking; many bubbles will appear on the surface. The dough should not be thick.

You will need to grease the pan with oil before each pancake, as there is no oil in the batter. Pour slightly less than a half ladle of batter onto the pan and cook for about 30 seconds on each side.
