The baking is simple and quick. I'll share with you my favorite pancake recipe. What's special about them? You can make them with milk, water, or any fermented dairy product (like ryazhenka, kefir, or buttermilk). The pancakes turn out thin and are perfect for any filling. They don't tear, yet have a delicate texture. The ratio of salt to sugar is ideal. I could praise them endlessly—be sure to try them! These pancakes are great for a festive table or to add variety to any everyday meal.

Cook the pancakes on both sides until golden brown. To prevent the edges from drying out, stack the pancakes as you cook and cover them with a towel.

    You can serve the ready-made pancakes on their own with honey, sour cream, or jam. Today I suggest a festive version—filled with cottage cheese and red fish, which I previously cut into small cubes. You can prepare any other filling to your taste.

    Place the crepe on a flat surface. Spread the filling closer to one edge.

    Fold the edges on both sides, then carefully roll up the crepe into a roll. Prepare all the crepes in this manner.
