Description

Delicious baked goods for the whole family. This is a great option for breakfast, afternoon snack, or a hearty dinner. Such pancakes were commonly baked in the old days and were very popular. Kulesh, or millet porridge, replaces part of the wheat flour, making them more nutritious and filling. You can use leftover porridge or prepare it in advance specifically for the pancakes. Of course, they require more time than classic pancakes, but it's worth it. They can be made in both sweet and savory versions. Serve the pancakes plain, filled with your favorite fillings, or with any sauces, jam, sour cream, or condensed milk. The baked goods are ready. Serve at the table.

    Prepare all the necessary ingredients for making kulesh pancakes. You can use leftover millet porridge, but we will be making them from scratch.

    Sort the millet, wash it, and pour hot water over it for 10-15 minutes to remove the bitterness.

    Rinse the millet under clean water and place it in a heavy-bottomed pot. Add water, season with a little salt, and cook over low heat, covered, until done. The millet should become soft and mushy, which will take about 20–25 minutes. Remove the porridge from the heat and let it cool.

    Place the porridge in a bowl, pour in warm milk, and blend with a blender to the desired consistency.

    Crumble the fresh yeast and mix until dissolved.

    Add sugar, salt, and one tablespoon of flour to the mixture and stir until smooth.

    Sift the wheat flour into the liquid part and knead a smooth, lump-free dough.

    Cover the bowl with dough and place in a warm spot for 30–40 minutes to rise.

    Heat a crepe pan over medium heat and grease it with vegetable oil. Pour a portion of the batter onto the pan and spread it evenly over the entire bottom surface. Fry the crepe on both sides until golden brown. Transfer the crepe to a plate, grease the pan again with vegetable oil, and continue cooking the crepes until all the batter is used up.
