
Pancakes with sour milk
Description
Tasty baked goods for the whole family. Thanks to the soured milk, the flavor of the pancakes acquires a light tanginess that accentuates the sweetness of the pastry. Keep in mind that the pancakes may tear when flipping—they are very delicate and soft, velvety in taste. It's best to bake them a little longer, then the pancake can be easily lifted by the edge and turned over. They are especially delicious with sour cream or sweet yogurt. The baking is ready. Serve at the table.

Prepare the listed ingredients. Milk can be of any fat content, even plant‑based. But the more sour the drink tastes, the more sugar you need to add to neutralize the sourness.

Crack the chicken eggs into a bowl or salad bowl, add salt and granulated sugar. You can replace the sugar with powdered sugar or syrup, honey (if you are not allergic to it).

Beat the chicken eggs with a whisk for no more than 2–3 minutes. It is important to thoroughly mix the whites with the yolks and sugar until the mixture lightens slightly.

Pour in the sour milk and whisk again. At this stage you can add a little baking soda (literally 2 pinches) and then you’ll get tasty fluffy pancakes, but not thin ones. If you decide to make thin pancakes after all, do not add the soda.

Wheat flour should preferably be sifted before adding. Add it in small portions, immediately mixing with a whisk, but without beating, so that lumps do not form. After the flour, pour in the vegetable oil and mix one final time. Let the dough rest for 15–20 minutes. During this time the gluten will activate and the pancakes will not tear.

Heat the pan over high heat and grease its bottom and sides with vegetable oil. Pour half a ladle of batter and cook the pancake for 1–2 minutes on each side. It's best to fry the pancakes on two pans at once — it speeds things up.

Fold the cooked pancake in half, then in half again, and place it on a plate. Cook the remaining pancakes, placing them on the plate. Serve warm with milk, tea, coffee, or lemonade.
