
Pancakes with kefir, boiled
Description
Homemade baked goods for tea. For the dough, use kefir of any fat content, heating it in a bowl on the stove or in a saucepan, but do not bring to a boil. It's important to warm the drink so the baking soda reacts and bubbles form. Add the oil directly into the dough; you can substitute vegetable oil with melted butter. Don't forget sweet spices such as ground cinnamon, vanilla, etc. Serve with tea or coffee.

Prepare the listed ingredients—they can be at any temperature, it's not that important. Instead of baking soda, you can use 1/2 tsp of baking powder. Do not add more baking soda, otherwise the baked goods will taste bitter.

Pour the kefir into a saucepan, pot, or a metal bowl with high sides. Place the container on the stove and heat to about 60 degrees, stirring occasionally to prevent curdling. Turn off the heat and mix in the baking soda—it will immediately form large bubbles in the drink.

Add the sugar and salt, mix thoroughly until dissolved. Break in the chicken eggs, pour in the water, and immediately whisk everything together with a whisk before the eggs have a chance to coagulate.

Gradually incorporate the premium wheat flour in parts to prevent lumps from forming. Add the vegetable oil and mix. The batter is ready—pancakes can now be fried. Thanks to the hot base, the gluten is instantly scalded and becomes sticky.

Heat a skillet on the stove and grease the bottom with oil for the first time. Pour in half a ladle of batter and spread it into a round shape. Fry for 1-2 minutes, then flip to the other side. The pancakes will turn out bubbly and lacy on one side. Keep in mind that they are very soft, so flip them carefully.

Fry the remaining pancakes in the same way, stacking them on a plate. Decorate with fresh berries or fruits, mint leaves, jam or preserves. Brew a fragrant tea. Enjoy your meal!
