
Yeast pancakes with kefir
Description
The baking is simple and quick. For making kefir pancakes, I also use semolina: it adds density to the batter, making the pancakes very filling, slightly thick, porous, and extremely appetizing! Keep this recipe in mind. The baked goods are ready. Serve at the table.

Before starting to cook, lay out all the ingredients on the table, and begin by gently warming some kefir in a small saucepan.

In a convenient spacious bowl, rub the yeast with your fingers and add a tablespoon of sugar to it.

Whisk these ingredients with a whisk until the yeast dissolves.

Pour warm kefir into the yeast mixture and mix everything well.

Add the remaining sugar, salt, vegetable oil, and warm water. Mix everything well.

In a separate bowl, whisk the eggs with a whisk until a homogeneous mixture is obtained.

Also, in a separate bowl, combine the flour and semolina.

Whisk these ingredients together with a whisk until a uniform dry mixture is obtained.

Add the dry mixture of semolina and flour to the liquid kefir mixture.

Whisk until a smooth batter forms. Cover the bowl with the batter using a kitchen towel and let it rest for about 1 hour.

After an hour, the dough has risen and become bubbly. Now stir it with a spoon and start baking the pancakes.

Grease the crepe pan with a thin layer of vegetable oil (you can do this only once, since oil was already added to the batter), heat it well over medium heat, and pour in a ladle of batter. Tilt the pan in your hands to spread the batter evenly and form a crepe. Cook for about 3 minutes on one side until golden brown and appetizing.

Then carefully flip the pancake to the other side with a spatula and continue frying until golden brown. Stir the batter with a spoon before pouring each pancake.

Place the ready-made kefir pancakes in a stack, brush them with butter, and serve with sour cream and honey.
