Homemade treats for tea. This pancake batter recipe is universal for both sweet and savory pancakes. For the sweet version, you'll need to add two or three tablespoons of sugar. To prevent the pancakes from tearing when flipping, it's essential to let the batter "rest" for 15–20 minutes. During this time, the flour will absorb the liquid and the gluten will activate. You can add a bit of seasoning or chopped herbs for savory pancakes, or vanilla sugar and ground cinnamon for sweet ones. Serve warm or chilled. Perfect with tea.

    Prepare the listed ingredients. It is preferable to use milk at room temperature, although the fat content of the milk is not particularly important. If you have free time, sift the flour through a sieve.

    Break the chicken eggs into a bowl or salad bowl and add salt. If you are preparing savory pancakes for stuffing, you can add a couple of pinches of seasoning. If you want to treat children with sweet pancakes, add 2 tablespoons of granulated sugar.

    Pour in the prepared milk of any fat content. You can even use sour milk — the pancakes will turn out tasty, tender, and aromatic. Whisk everything with a whisk for about 2–3 minutes.

    Add the high-grade wheat flour in parts, but do not beat it; instead, gradually incorporate it in a circular motion so that it dissolves slowly into the liquid mixture. This way, no lumps will form in the dough.

    Once you've finished working with the flour, pour the neutral-flavored vegetable oil directly into the dough. Gently mix and let the dough rest for 15–20 minutes at room temperature. Then mix again, lifting the flour from the bottom of the container.

    Preheat a crepe pan and grease it with oil the first time. Pour in some of the batter and swirl to spread it evenly. Do not pour too much batter to avoid thick crepes. Cook for 1-2 minutes and flip onto the other side. Reduce the heat to medium and cook the remaining crepes in the same way.
