Step 1

1. Anyone can learn to bake lacy and fluffy pancakes. My 15-year-old niece makes these pancakes in just one hour. The most important thing is good-quality kefir.
- 2
Step 2

2. Sift the flour. This is necessary to enrich it with oxygen, so that the finished pancakes turn out fluffy.
- 3
Step 3

3. Add the eggs and start kneading the dough.
- 4
Step 4

4. Pour in one liter of medium-fat kefir (recommended 2.5%). Do not add water, as this is a classic kefir pancake recipe.
- 5
Step 5

5. Add salt and sugar to taste; at the very end, add a couple of tablespoons of vegetable oil (or clarified butter).
- 6
Step 6

6. Knead the dough until it becomes smooth and lump-free.
- 7
Step 7

7. The dough should have the consistency of sour cream. At the end, add baking soda and let the dough sit for 20 minutes in a warm place.
- 8
Step 8

8. Heat the pan well, and before frying the first 2-3 pancakes, grease it with vegetable oil.
- 9
Step 9

9. Now you can start frying the pancakes. This should be done only over medium heat.
- 10
Step 10

10. Fry the pancakes on both sides until golden brown.
