
Beef Liver Pancakes
Description
The baking is simple and quick. These little pancakes are not only tasty but also quite versatile. You can serve them "plain," accompanied by a sauce, for example. Or you can prepare a filling for them. There's plenty of room for experimentation: fried vegetables, mushrooms, or even rice with boiled egg or herbs. For those who aren't particularly fond of such healthy offal, these pancakes might become a real discovery. I highly recommend giving them a try.

1. First, wash the liver, remove the membranes, and cut it into medium-sized pieces. Place them in the blender container and pour milk over them.

2. Beat everything until smooth, then pour into a deep bowl. Add the eggs.

3. Pour in a couple of tablespoons of vegetable oil.

4. Whisk with a whisk until the mixture becomes homogeneous. Add salt to taste and pepper if desired (you can also use various spices).

5. Add the flour and mix thoroughly to prevent lumps from forming. Let the "dough" rest for 5–10 minutes, then mix again and check the consistency. Add a little more flour if necessary.

6. Grease a frying pan with a small amount of vegetable oil and heat it. Pour in the batter a little at a time and cook thin pancakes.
