
Lentil Pancakes
Description
Tasty baked goods for the whole family. Lentil pancakes are low‑calorie, gluten‑free, flour‑free, sugar‑free, oil‑free, egg‑free, and yeast‑free. At the same time they contain a considerable amount of plant protein. They turn out soft and elastic. This allows you to eat them with any filling. When baking you can omit vegetable oil, but without it the pancakes become a bit dry.

Prepare all the necessary ingredients for lentil pancakes.

Rinse the red lentils and cover them with clean water.

Let stand for 3 hours at room temperature.

Blend the soaked lentils in a blender until smooth and uniform. The mixture should be like purée.

Add salt and spices to taste. It can be a blend of pepper, Italian or French herbs.

Start baking lentil pancakes. Lightly coat a preheated non‑stick skillet over medium heat with a thin layer of vegetable oil.

Place two tablespoons of batter. Using circular motions, spread it across the pan. The pancake should be 11–12 cm in diameter. Fry the pancake on one side for 1.5 minutes, until the surface becomes matte and dries.

After that, flip the pancake and cook it for 1 minute on the other side.

Transfer the ready lentil pancakes onto a plate. The given amount of ingredients yields 6-7 pancakes.
