
Buckwheat yeast pancakes
Description
Delicious baked goods for the whole family. For making buckwheat yeast pancakes, the base can be not only flour but also regular buckwheat groats. To do this, simply grind the groats beforehand in a blender or coffee grinder. These pancakes are perfect for sweet, meat, or mushroom fillings. Serve cooled or slightly warm.

1. First, prepare the starter. To do this, dissolve the yeast in half of the warm milk, add sugar and about one cup of buckwheat flour. Mix thoroughly and let it sit for about 40 minutes in a warm place.

2. Beat the eggs with a pinch of salt (in some variations, for making buckwheat yeast pancakes, it is suggested to separately cream the yolks and whip the egg whites). Add the remaining milk and flour, including wheat flour. Mix well and combine with the sponge. Place back in a warm spot for about half an hour more.

3. Let the dough rise well, then mix again and let it rise once more.

4. Now the dough is completely ready, and you can start frying homemade buckwheat yeast pancakes.

5. Grease the pan with oil or add oil directly to the batter. Pour the batter onto a well-heated pan and fry thin, appetizing pancakes on both sides. Afterwards, you can simply brush them with butter or fill them with your favorite filling.
