Yeast milk pancakes

Description

You can use either fresh or dry yeast—the dough will be equally delicious, very aromatic, and will always form bubbles. It is these bubbles that create the lacy pancakes. Don't forget to mix a little oil into the batter and grease the pan with it to prevent the pancakes from sticking. At first, they are soft and tender, but once cooled, their edges become crispy and crunchy. Serve them with tea or coffee.

    Prepare the listed ingredients. Instead of fresh yeast, you can use dry yeast — 4-5 grams. Warm the milk to 30 degrees, but no hotter, to avoid killing the yeast.

    Pour the milk into a deep bowl or salad bowl, add the chicken egg, and sprinkle in the sugar and salt. You can also add a little vanilla sugar or ground cinnamon—your choice.

    Whisk everything thoroughly with a whisk. It is important that the sugar completely dissolves in the warm milk! Then mix in the fresh or dry yeast into the liquid.

    Add the wheat flour in parts and knead a not too thick dough. Pour in the vegetable oil at the end and mix again.

    The dough will immediately form bubbles — it's important to wait until they rise a second time. Cover the container with plastic wrap and leave at room temperature for 10–15 minutes. Then stir the dough and let it sit for another 10–15 minutes under the wrap.

    The second time, the air bubbles will be smaller and will fluff up the yeast dough. It will rise by about 1.5 to 2 times. Now you can fry the pancakes.

    Preheat the pan and grease the bottom with vegetable oil using a silicone brush. Pour in half a ladle of batter and immediately spread it into a circle. It's better to make not-too-wide pancakes, as they turn out soft and are difficult to flip. If the edges of the pancakes burn while the center remains undercooked, reduce the heat to moderate, slightly below medium. Cook the pancakes for 1-2 minutes on each side.

    Place the lace pancakes on a plate or dish and serve with jam, jelly, syrup, poppy seed filling, sour cream, etc. Keep in mind that the jam will seep through the lace, so there's no need to fill these sweet pancakes. Enjoy your meal!
