
Lacy pancakes on sourdough starter
Description
Surely every homemaker knows how to bake pancakes, but few have tried making them with a starter. I recommend using wheat starter, although you can use rye starter if desired—the taste of the pancakes will only change slightly. It's best to cook pancakes on a thick-bottomed or cast-iron skillet without greasing it with oil. This way, the pancakes will cook evenly and turn golden brown. Serve these pancakes with honey, jam, preserves, sour cream, or various syrups—the choice is yours.

1. Prepare the starter: place the sourdough starter into a bowl, add water and mix thoroughly. Add flour and mix. Cover the bowl with plastic wrap and let sit at room temperature for 8 hours.

2. Transfer the starter to the bowl of a mixer, add the buttermilk, water, and mix well. Add the eggs, salt, sugar, and mix again. Add the sifted wheat flour and vegetable oil.

3. Mix in a dough mixer at speed 1 for 1-2 minutes until smooth. Pour the dough into a glass or enameled container, cover with a bowl, and let stand in a warm place for three hours. Stir the dough every 30 minutes.

4. Heat a skillet and grease it with vegetable oil. Cook the pancakes for 1 minute on each side. Serve the pancakes with your favorite toppings: sour cream or jam.
