Crepe pies
Description
The pastry is prepared simply and quickly. Crepe-pies turn out fluffy and tender inside, and slightly crispy on the outside. Choose the filling to your taste. For me it's boiled meat with rice, carrots, and onions. Very tasty and hearty! These crepe-pies make an excellent second dish for lunch or a main dish for dinner. Serve with any sauce, for example, sour cream.
Instructions
- 1
Step 1

Pour the milk and whey into a bowl and warm it. Add the sugar and yeast, and stir.
- 2
Step 2

Let the yeast activate and foam. Add the egg and vegetable oil.
- 3
Step 3

Add the salt and sifted flour.
- 4
Step 4

Mix a sufficiently thick dough, with a consistency similar to condensed milk. Place it in a warm spot. After 20 minutes it will increase in volume. Stir the dough and let it rise again. Then repeat this procedure once more.
- 5
Step 5

While the dough is rising, prepare the filling for the pancake pies. Peel, wash, and chop the carrots and onions. Place them in a pan.
- 6
Step 6

Pour in the sunflower oil and sauté the vegetables for 10–12 minutes, stirring occasionally.
- 7
Step 7

Finely chop any boiled meat and add it to the pan with the onion and carrot.
- 8
Step 8

Also add boiled rice.
- 9
Step 9

Season the filling with salt to taste and mix. You can also add pepper.
- 10
Step 10

Pour a portion of the batter onto the hot skillet with a ladle.
- 11
Step 11

Wait until the surface of the batter is covered with bubbles and lightly browned. Place two tablespoons of filling on one side of the pancake.
- 12
Step 12

Cover with the other half of the pancake and press the edges so that they “stick together”. Then fry the pancake on the other side.
- 13
Step 13

Place the ready blini‑pirozhki on a plate.
- 14
Step 14

The pancake-pies are ready. Serve with sour cream.
