
Pancake Cake
Description
Perfect with tea and coffee. Pear cake with buttercream is so delicious that everyone will definitely ask for seconds! It is made without baking, very quickly and simply. Such a dessert can even be made from leftover crepes in the evening and sent to the refrigerator overnight. Instead of pear, you can use steamed or caramelized apples. The baked treat is ready. Serve to the table.

Prepare the listed ingredients. Pancakes can be made with either milk or water.

Whisk the eggs in a deep bowl, pour in the water, add granulated sugar and salt, and mix thoroughly. Add the wheat flour and fold it into the egg mixture with circular motions. Pour in the vegetable oil and let the dough rest for 15 minutes to relax the gluten.

Heat a frying pan and grease it with vegetable oil for the first time. Bake the pancakes for one minute on each side until golden brown, pouring a portion of batter into the pan and swirling it into a круг. Let them cool.

Crack the hazelnuts and remove the kernels. Toast them in a frying pan, let them cool slightly, and grind them into crumbs.

Whip the high-fat cream with sugar for literally 1–2 minutes, but no longer, so that it doesn’t turn into butter! Add the nut crumbs to the container.

Add the cocoa powder. If desired, you can replace it with melted dark or milk chocolate.

Mix the dry ingredients into the cream at low speed so as not to whip it.

Rinse the pears in water, set one aside for decoration. Cut the rest and remove the seeds. Cut into large cubes.

Place 5-6 pancakes in an overlapping pattern in a springform pan so that they cover the bottom and their edges hang over the sides of the pan. Spread one-third of the cream, and on top of it, one-third of the sliced pears in a random order.

Cover with a pancake and press lightly so that the sliced pear "sinks" into the cream. Then spread the second part of the cream and sliced pear over the pancake, cover with a pancake, and press down. Spread the remaining cream, the sliced fruit, and gather the overhanging edges. Place the cake in the refrigerator until morning, remembering to leave a couple of pancakes for decoration.

Remove the finished soaked cake from the refrigerator and from the mold, decorate the top with the remaining crepes, fresh mint, and sliced pear. Serve to the table.
