Description

This recipe won't take much time. My niece is a real sweet tooth. Once I visited them during Maslenitsa—the pancake season—and decided to treat the child myself with delicious pancakes. But then I thought plain pancakes were too ordinary and not festive enough, and my visit was already a celebration for the whole family. Without much hesitation, I decided to surprise them and made a pancake cake with jam. My niece was thrilled. The recipe for this pancake cake is simple, but you can use your favorite jam to make it the most delicious.     1. Let's start by preparing the dough. To do this, mix all dry ingredients in one bowl. Don't forget to sift the flour.

    2. Pour half of the warm whey into the flour. Knead thoroughly until no lumps remain. Then add the remaining whey and knead again.

    3. Beat the egg very lightly and add it to our batter. Mix everything thoroughly again until smooth. The batter should be slightly runny, like kefir. Be sure to add vegetable oil to the batter so that you won't need to pour oil into the pan each time when frying the pancakes.

    4. Heat a frying pan, lightly grease it with vegetable oil so the first pancake doesn't stick. Pour enough batter onto the pan to form a thin pancake.

    5. Bake the pancakes until all the batter is used up. I ended up with a small stack of 12 delicious pancakes.

    6. Let our pancakes cool completely, and in the meantime, prepare the filling for the pancake cake. Take the jam from storage and simply transfer it into a serving dish.

    7. Next, let's prepare the cream. Place cottage cheese, sour cream, and vanilla sugar into a blender. Mix thoroughly until smooth.

    8. Now it's time to assemble our pancake cake. To do this, we spread the cottage cheese cream on the first pancake.

    9. The next crepe — with jam. Continue alternating this way until you run out of crepes. For the top layer, you can simply decorate with jam, or cover with cream and sprinkle with grated chocolate. Alternatively, garnish with fruits or berries. Let the crepe cake sit for about 20–25 minutes to soak in the flavors, then call your sweet tooths to the table.
