
Crepe cake with cream cheese
Description
A delicious baked treat for the whole family. A pancake cake can be served for breakfast or afternoon tea, or on a festive table. If you like, you can layer sliced bananas or fresh berries—cherries, blueberries, and so on—between the pancakes, and garnish the dish with jam or confiture. It can be served with tea or coffee.

Prepare the listed ingredients.

Whisk chicken eggs with 40 grams of sugar, a pinch of salt, kefir of any fat content, and water. Add wheat flour and fold it thoroughly into the liquid, but do not whisk, so that lumps do not form. Pour in vegetable oil, mix, and let the dough rest for 15 minutes.

Cook the pancakes for about a minute on each side on a well-heated skillet, greasing it with sunflower oil the first time.

Mix the cream cheese with the remaining sugar. Place two pancakes on a plate as the base and spread them with some of the cream cheese mixture.

Coat all the pancakes with cheese in this way; do not coat the top pancake. Put the cake in the refrigerator to absorb for 1–2 hours.

When serving, garnish the cake with berries, cut it into portion-sized slices, and don’t forget the fragrant tea.
