Instructions
- 1
Step 1

Prepare the listed ingredients. You can use large tomatoes or cherry tomatoes.
- 2
Step 2

Crack chicken eggs into a deep bowl; add salt and pour in cold water. Whisk everything together with a whisk for about 1 minute. You can substitute water with milk, kefir, or whey.
- 3
Step 3

Add the wheat flour and whisk everything with a whisk. Then pour in the vegetable oil and leave the dough for 15 minutes.
- 4
Step 4

Heat the frying pan; the first time, grease it with vegetable oil and pour some of the batter onto it. Cook each pancake for about a minute per side.
- 5
Step 5

In the same way, bake all of the pancakes from the remaining batter.
- 6
Step 6

Grate the cheese on a fine grater, rinse the tomatoes under water and dice them small, keeping a couple aside for garnish.
- 7
Step 7

Spread the first pancake with mayonnaise or sour cream, then spread a little grated cheese and chopped tomatoes on top. Cover with the second pancake and repeat the procedure.
- 8
Step 8

Assemble the rest of the crepe cake this way, covering the top with a thick layer of grated cheese. Chill the dish in the refrigerator for 1 hour so it can set and absorb the flavors.
- 9
Step 9

Before serving, decorate the cake to your taste with the remaining tomatoes and fresh herbs.
- 10
Step 10

You can slice it into serving-sized pieces.
