
Pancake cake for Maslenitsa
Description
The pastry is prepared simply and quickly. A pancake cake will adorn any festive table. It is not only very tasty, but also looks very original on the table. Prepare all the ingredients.

Prepare the batter for pancakes. Take exactly 1 – 1 cup of milk, 1 cup of boiling water, 1 cup of flour, 1 tsp. of baking powder, 1 egg and 1–2 tbsp. of oil. Add the boiling water to the milk so that you get a warm liquid, then add the remaining ingredients. Mix everything with a mixer or a whisk.

Dissolve the gelatin in 0.5 cup of water, then warm it.

Fry the pancakes in a heated pan.

The crepes turn out very thin and with beautiful holes.

Prepare the cottage cheese filling. Mix the cottage cheese with sugar and a spoonful of sour cream.

You can use fresh or frozen cherries. Be sure to remove the pits from the cherries!

Line the mold with plastic wrap.

Add sugar to taste, the juice released from the cherries, and gelatin to the liquid yogurt. Mix well.

Place 1 tbsp of cottage cheese on the pancake.

Roll the pancake into a roll. Make 5–6 rolls.

Pour a few spoonfuls of the mixture into the pan.

Place two rolls on top and pour the glaze over them.

Repeat another layer of pancakes and pour the glaze over it. Place in the refrigerator to set for 2–3 hours.
