
Pancake cake for diabetics

If we replace some of the ingredients when making the cake, we get a treat you can enjoy without harming your health. But even without sugar, keep in mind that you still shouldn’t indulge in this cake every day. So, here goes,

Prepare all ingredients.

First, prepare the cream. To do this, combine the cottage cheese, sour cream, and mashed raspberries. You can use any berry or fruit purée instead of raspberries. Add sugar substitute to taste and blend everything until smooth.

To make the pancakes, combine the egg whites, salt, sugar substitute, and vegetable oil. Whisk with a whisk or blend with a blender.

Add water.

Add the flour and baking powder.

Mix until smooth and uniform.

Cook the pancakes in a buttered frying pan.

As you cook the blini, spread them with cream and stack them in a pile.

Assemble the whole cake in this way. Put it in the refrigerator for a couple of hours until completely cooled.

You can decorate a finished crepe cake however you like. I spread raspberry purée on top and garnished it with a crepe that I rolled into a small roll and cut into pieces.
