In this recipe, for example, the pancakes are filled with a mixture of beet and fish. The result looks very festive and attractive when sliced, so be sure to cut the pancakes into 2-3 pieces before serving. Serve this dish with sour cream or a white sauce for delicious flavor. Don't forget to taste the filling and adjust the salt and pepper seasoning—perhaps you'll want a bit more salt.

1. Beat the eggs with a whisk, add salt, pepper, a little sugar, basil, and dried herbs. Mix, then add milk, flour, baking soda, vegetable oil, and stir well with a whisk. The batter is ready.

2. Grease a heated skillet with vegetable oil, pour a ladle of batter onto it. Pour excess batter back into the bowl. Fry the pancakes over low heat on both sides until golden brown.

3. Prepare the filling: grate the beet, pickled cucumbers, and garlic (on a fine grater) on a coarse grater. Add mayonnaise, salt, and mix well. Transfer the filling to a sieve and let the excess liquid drain.

4. Mix the cooked rice with sugar, pepper, a tablespoon of mayonnaise, and apple cider vinegar. Finely chop the herring fillet. Chop the green onion and herbs, then mix them with the fish and rice.
