
Boiled pancakes with kefir
Description
Perfect for tea and coffee. The classic recipe for kefir-based batter pancakes is enhanced in this version with milk, making them more tender and fluffy. If milk is not available, you can add a little water to the batter instead. The baked goods are ready. Serve at the table.

1. The number of ingredients in the recipe for boiled kefir pancakes may vary. If desired, you can add 3 eggs instead of 2, in which case the amount of flour will also need to be increased.

2. Warm the kefir slightly and add the eggs to it. Mix thoroughly, then add a pinch of salt and sugar to taste. It's better not to use too much sugar; instead, sweeten the pancakes when serving, so they release easily from the pan and don't stick.

3. Gradually add the sifted flour and beat thoroughly. The dough should be slightly thick, resembling the consistency of pancake batter.

4. Heat the milk almost to boiling and slowly pour it into the batter in a thin stream, whisking vigorously. If lumps form, let the batter sit for 10–15 minutes to allow the flour to dissolve. Finally, add a little vegetable oil, and the batter is ready to cook the pancakes.

5. When the kefir pancakes are ready, you can brush them with butter and serve with a sweet topping, honey, or jam. These pancakes are also great for fillings—such as cottage cheese or meat, for example.
