
Pancakes with various fillings
Description
Perfectly pairs with tea and coffee. Prepare classic pancake batter using flour, egg, and milk. For the filling, boil the eggs. Then fill the pancakes and serve. Can be served hot or cold. Can be enjoyed with tea or coffee.

Break 1 egg into a bowl. Add 1 cup of milk, 1 teaspoon of salt, and 1 teaspoon of sugar. Whisk everything with a whisk until frothy.

Sift the flour. Knead the dough. It will turn out slightly thick. Add another cup of milk.

Next, I will use frozen spinach. It comes in small pre-formed blocks. This spinach has already been chopped, so I simply thaw it and add it to the dough. If using fresh spinach, wash it, chop it, blanch for 2-3 minutes in boiling water, then drain in a colander. Add the spinach to the dough. To achieve a uniform consistency of dough and spinach, after mixing, transfer the mixture to a blender and blend.

Add 2 tablespoons of vegetable oil to the batter. Mix well. For the first pancake, add a little vegetable oil to the pan. Pour a portion of batter onto the well-heated pan. Fry the pancake over low heat on one side, then flip to the other side. I cooked on a small skillet and got 15 pancakes. You can use a standard-sized pan, but you'll get fewer pancakes.

Prepare the filling. To do this, grate the boiled eggs on a coarse grater.

Add mayonnaise and spices to the egg (salt and pepper to taste). You can also add some herbs. I divided the total amount of pancakes and filling in half. One half I filled simply with egg, and the other half with egg and boiled chicken meat.

Place one type of filling on each pancake. Roll it up into a roll. Ready.

Serve the pancakes at the table. You can serve them immediately, but they are also very delicious when chilled.
