
Pancakes with liver and rice
Description
We start preparing liver and rice pancakes by baking the pancakes. Mix all the ingredients for the batter, knead it, let it rest for 20 minutes, then cook the pancakes. Finely chop the onion, sauté it, then add the liver passed through a meat grinder, salt, and pepper to the pan. Simmer for 15 minutes. Meanwhile, cook the rice, drain it in a colander, and mix it with the liver. Place 2 tablespoons of filling in the center of each pancake and roll them up into a tube. Serve warm or chilled, ideally with sour cream, as a perfect tea-time dish.

Mix all the ingredients for the pancake batter and knead it well. Let it rest for 20–25 minutes to rise slightly.

Then fry the pancakes on a hot skillet on both sides.

Pass the liver through a meat grinder.

Chop the onion and fry until golden, then add the liver mince, season with salt and pepper, and simmer for 15 minutes.

Boil the rice and drain it in a colander. Once the rice has drained, mix it with the liver.
