Pancakes with nuts
Description
The recipe won't take much time. Nut-filled pancakes at home are not only incredibly delicious but also healthy. Instead of raisins, you can use other dried fruits or candied fruits as additional ingredients. If desired, you can also add a little liqueur or brandy to the filling, if the pancakes are meant for adults. Serve with tea or coffee.

Step 1

1. First, prepare the batter. In a deep bowl, beat eggs with a pinch of salt and a small amount of sugar. Whisk until smooth and slightly bubbly. Pour in half of the milk and gently mix. Add the previously sifted flour and whisk again—the batter will be quite thick. Gradually add the remaining milk, stirring constantly. This way, the nut-filled pancakes made at home will be lump-free. Wash the lemon, dry it, and grate a little zest—this will give the batter an incredible aroma and flavor. Finally, add a little vegetable oil to ensure the pancakes easily release from the pan, and the batter is now fully ready.

Step 3

3. One of the important aspects of frying pancakes is the pan. It's best to use a thin pan with low sides, and most importantly, it should be properly heated before pouring in the batter. Fry the pancakes on both sides.

4. Chop the nuts slightly. You can do this with a knife or using a blender. Also add the dried raisins and a little sugar to the bowl. Blend until a uniform paste forms, but still containing nut pieces.

6. Slightly cooled pancakes can be filled with filling. Place a small amount on the edge and carefully roll the pancake into a roll or fold into a envelope shape. Serve these pancakes plain or with sour cream, for example.
