Pancakes with meat, carrots, and cabbage

Description

Homemade baked goods for tea. These hearty, hot pancakes turn out thin and tender, and the filling is fragrant and very tasty! Cabbage gives them special juiciness. You can serve the pancakes for breakfast or as a hearty snack during the day, and you won’t be ashamed to set them before guests either. Few people will be able to refuse or resist golden-brown, appetizing, crispy-edged pancakes! The recipe will come in handy for Maslenitsa and at the end of the fast if you were fasting—in Bright Easter Week. Ideal baked goods for any situation. The baked goods are ready. Serve at the table.

    Prepare all ingredients. You can use any ground meat; I used pork.

    First prepare the batter for the pancakes. Combine milk, flour, eggs, and vegetable oil. Add salt and sugar to taste.

    Mix until smooth and leave on the kitchen table for 15 minutes.

    In a frying pan, heat vegetable oil and sauté the onion and carrot over high heat until tender.

    Add the finely shredded cabbage and sauté over high heat, stirring often, until tender and unevenly browned in spots, about 7–10 minutes.

    Then add the ground meat, salt, and spices to taste. Fry, breaking up any large clumps of meat, for about 7–10 minutes more (until the meat is cooked through).

    You can make the pancakes in parallel while the filling is cooking, or afterwards while the filling cools down a bit. Stack the finished pancakes in a pile — I ended up with 11. The filling is just enough for this amount.

    Place approximately 1–2 tablespoons of cabbage-meat filling on the edge of the pancake.

    Fold the edges from both sides.

    Roll up the remaining pancakes in the same way. Before serving, it’s best to fry the pancakes on both sides in lard or vegetable oil — that way they’ll be even tastier and more appetizing!
