
Crepes with meat and mushrooms
Description
The pastry is easy and quick to make. This is my mother’s recipe. Whenever she asked which blinchiki to make—blinchiki with meat and mushrooms or blinchiki with jam—I always picked the first. These blinchiki take a little longer and are a bit more work to prepare, but they turn out tastier and more satisfying. Everyone likes blinchiki like these—men, women (me, at least), and children—so the dish is a good choice when you need to feed the whole family in one go. Serve warm or chilled. Perfect with tea.

Let’s start with the filling. Here are the ingredients for making it.

If you do not dislike onion, you can add it to the filling as well.

Fry the ground pork in oil until fully cooked.

Then, in the same pan, sauté the finely chopped mushrooms and onion. Again, until cooked through.

Combine the browned ground meat, mushrooms with onion, and boiled eggs. Season with salt and pepper.

Run the filling through a meat grinder, or chop it in a food processor. Add a little mayonnaise to the chopped filling and mix.

Now let's get started on the pancakes. Crack the eggs into a bowl.

Add the flour and water to the same mixture as well.

Add the milk and butter to the same mixture. Using a blender, blend everything until smooth and uniform.

Pancake batter: salt if you like, then fry the pancakes in a frying pan with a little oil. Fry first on one side…

…then on the other side. You don’t need to brown the blini heavily—just until they set and hold together without falling apart.

Take a ready-made pancake and place a little filling in the center.

Evenly spread the filling over the entire crepe.

Roll up.

You end up with a big stack of pancakes like this.

But that's not all — you still need to melt a little butter in a skillet and fry the already-rolled pancakes in it until the edges turn golden. Only then can the pancakes be served. :)
