
Pancakes with brains
Description
It is obvious that brains in our country are not much loved (in culinary terms, though not only in culinary terms)—many consider this offal unworthy of cooking. Unjustly so: brains have a very pleasant and unusual texture and, on the whole, turn out quite tasty. From personal experience I can say that brains pair perfectly with the most ordinary pancakes. Step 1

First, using the classic method, you need to cook the pancakes. I will not go into detail here; I will only list the ingredients for the batter: flour, milk, 2 eggs, vegetable oil, and 1/2 teaspoon of salt. The result should be very thin, lightly salted blini.

Now we move on to the brains. First they need to be rinsed thoroughly.

We treat the brains as follows: cover them with water to which a little vinegar has been added and leave to soak for one and a half hours. Then drain this water, clean the brains of membranes and blood, then pour boiling water over the brains and leave until completely cooled.

Finely chop the prepared brains. Melt the butter in a frying pan, add the brains, and simmer for about 15 minutes over low heat.

Place the stewed brains in a large bowl, crack in 2 eggs, and add finely chopped herbs. Season with salt and pepper.

Stir and warm over low heat for 1–2 minutes.

Wrap the prepared filling in the pancakes that have been baked in advance. Wrap so that you end up with rolls.

First dip the finished pancake rolls in beaten egg, then coat in breadcrumbs, and place them in a frying pan with hot vegetable oil. Fry until golden brown.
