Pancakes with Maple Syrup

Description

Baking is simple and quick. I've loved pancakes since childhood, but for well over a decade, first my mother and then my wife made traditional Russian crepes and blini for me. Everything changed after one visit to a restaurant where I got to try delicious Canadian pancakes with maple syrup. I absolutely loved them. Then I searched for a long time for a good, simple pancake recipe with maple syrup, tried several, and finally found the perfect one—which I'm sharing with you. The pancakes turn out excellent—much fluffier and more tender than the familiar Russian crepes we're used to, and as for how well they go with maple syrup—words can't do it justice; you have to make them and try for yourself :)

    Ingredients.

    Separate the egg whites from the yolks.

    Sift the flour and dry yeast into a separate bowl.

    Add the milk (at room temperature) to the yolks and whisk lightly. Add to the dry mixture.

    Whisk until smooth and homogeneous.

    Add sugar to the egg whites and beat until soft peaks form.

    Add the beaten egg whites to the batter.

    Gently mix with a spoon (do not whisk). In the end, you should have a thin but fairly fluffy mixture.

    In a skillet, melt a little butter or heat some vegetable oil. Spoon the batter onto the hot skillet as small round pancakes.

    Fry until cooked on both sides.
