Description
Perfect with tea and coffee. The classic recipe for blinis with red caviar calls for butter, but in this version it's replaced with soft cheese. This is a delicious and incredibly festive dish that disappears first from the table. Serve cooled or slightly warm.

1. Mix the sifted flour with a pinch of salt and sugar. Separately, beat the eggs and add a little milk. Gradually pour the egg mixture into the flour and mix thoroughly. You can also use any other trusted recipe for making pancakes with red caviar.

2. The batter should be thick but smooth, without lumps. Melt the butter in the microwave and slowly pour it into the batter in a thin stream. Add the required amount of milk to achieve the desired pancake batter consistency. If desired, you can add a spoonful of cognac or liqueur to the batter.
