
Crepes with beef liver
Description
The recipe won't take much time. So, I'll show you how to quickly make pancake batter. I haven't used a whisk for a long time, since I always have my helper on hand — a blender. I mixed all the ingredients at once and the batter is ready! The filling is classic — liver and fried vegetables. Do not add butter to the filling, because the pancakes are served warm, and the filling would be very greasy, don't confuse it with pâté. If you are making pancakes in advance, then place them in a container, seal it tightly with a lid and store them in the refrigerator; before eating, fry them in a pan with a little oil, it will be very tasty. Serve warm or chilled. Perfect with tea.

Prepare the ingredients for the pancakes and the filling. I have already boiled a piece of beef liver in advance, cooled it well, and removed the membranes. I’ll tell you how to properly boil liver: in a small saucepan bring water to a boil (use enough water to completely cover the liver during cooking), place the piece of liver in it and boil for 40–45 minutes; for small pieces, the cooking time is 15–20 minutes. Add salt 5 minutes before the end of cooking. Cool the liver in the water in which it was boiled.

Prepare the pancake batter: place all the ingredients into a deep mixing bowl at once.

Using an immersion blender or a mixer, combine them until smooth, so that no flour lumps remain. While beating, add a couple of spoons of vegetable oil; the pancakes will be more pliable and won’t stick to the pan.

Heat the pan very well. If it is non‑stick, you don’t need to grease it; if it’s another type, it’s better to grease it with vegetable oil using a brush. Pour the batter, fry until golden brown on both sides.

Depending on the pan's diameter, you will get 12–16 pancakes.

Now you need to prepare the filling: dice the peeled onion, grate the carrot on a coarse grater. Sauté the vegetables in vegetable oil until cooked through.

Place the liver (for convenience I cut it into large pieces), fried vegetables, salt, and ground black pepper into the grinder bowl.

Turn on the food processor for 3-4 minutes. You can use a meat grinder for this purpose. The filling is ready.

Place 2 spoonfuls of filling on each pancake.
