
Pancakes with feta cheese
Description
The recipe won't take much time. This is one of my favorites. The crepes always turn out great—soft, tender, don't tear, and cook beautifully. You can use any filling; I'll show you a cheesy one. Feta cheese is usually dry, so generously add sour cream, herbs, and garlic for flavor, and you'll get a perfect snack. Serve cooled or slightly warm.

Prepare the ingredients for the pancakes and the filling. Let's get started!

In a deep bowl, combine 1 cup of milk with sugar, salt, and eggs.

Add the flour.

Whisk the batter well with a whisk until it becomes smooth, homogeneous, and free of lumps.

Add a couple of spoons of butter, mix again.

Add a glass of boiling water and mix quickly, "scalding" the batter. Let it sit for about 5 minutes. During this time, thoroughly heat the crepe pan.

Pour one ladle of batter and fry the pancake until the edges are golden brown.

Flip with a spatula or your hands. Sear the other side.

Repeat with the remaining dough. I ended up with 12 pancakes.

Prepare the filling. Grate the feta cheese on a coarse or fine grater (as preferred), add chopped herbs, garlic, a little ground pepper for flavor, and sour cream (you can increase the amount if you prefer a juicier filling).

Mix well. There is no need to add salt to the filling, as feta cheese is salty enough.

Spread the crepe with feta cheese, one tablespoon will be enough.

Roll into a tube.
