
Pancakes with banana
Description
Perfectly pairs with tea and coffee. Banana pancakes can be served for breakfast or simply as a dessert with tea. Prepare all the ingredients from the list. Use a large, ripe, and sweet banana.

To simplify the process, we'll prepare the batter in a blender, but if you don't have a blender, make the batter as you would for regular pancakes, mashing the banana with a fork. Peel the banana and slice it into rounds.

Add eggs, salt, and sugar to the banana to your taste.

Pour in the milk.

Blend everything until smooth, the consistency should resemble a smoothie.

Pour the dough into a deep bowl. Add flour.

Mix until the lumps disappear. Adjust the batter's thickness with flour—add more if it's too runny, or add liquid if it's too thick. Let the batter rest for 40–50 minutes. This step will allow the batter to "ripen," resulting in crepes with a more elastic and tender texture.

Heat a frying pan over medium heat, preferably a non-stick one. Grease it with vegetable oil for frying. Pour the batter into the center and spread it evenly across the pan with circular motions.

Fry the pancake on one side until golden brown, then flip to the other side.

Fry the pancakes using this method until all the batter is used up. I ended up with 10 pancakes using an 18 cm diameter pan. If desired, you can brush the pancakes with butter.
