
Pancakes with bananas, prunes and nuts
Description
Wonderful blini with a fragrant filling will please the whole family — make them together with children and adults. If you wish, you can omit the sugar from the batter — you’ll get sugar-free blini. The sweetness of the filling will be quite enough for a bright dessert flavor. Serve warm or chilled. Perfect with tea.

Prepare the listed ingredients. If you like, you can soak the prunes in warm water beforehand so they taste softer.

Place sour cream of any fat content in a deep bowl, add chicken eggs, and add sugar and salt. If you like, you can replace the sugar with stevia syrup or leave it out entirely — then you will get sweet pancakes without sugar.

Pour in warm water and whisk everything with a whisk. You can add a little vanilla sugar or flavoring.

Add the wheat flour and fold it into the mixture with slow, gentle movements. Pour in the vegetable oil and fold it in. Let the dough rest for 15–20 minutes.

Heat the skillet and grease it with oil the first time. Stir the batter, scooping it up from the bottom. Pour a portion of batter onto the skillet and spread it into a round shape. Cook the pancake for about 1–2 minutes on each side until golden brown.

Bake all the pancakes from the remaining batter in the same way.

Peel the banana and slice it into rounds or cubes. Chop the prunes and chop the walnut kernels. Mix everything in a deep bowl.

Place some of the filling on a pancake and roll it into a roll or fold it like an envelope. Fill the rest of the pancakes the same way.
