
Crepes with Sour Milk
Description
Perfect with tea and coffee. In our family, milk for some reason goes sour with remarkable regularity. However, if we find that the milk in our fridge has turned sour, we don’t despair. Quite the opposite—we rejoice, because we know that today we’ll have sour-milk crepes for breakfast (though sometimes for lunch or dinner too)! :) Personally, I like sour-milk crepes better than any other kind purely for taste; they keep a pleasant tangy note. These crepes are great for wrapping fillings—both sweet and savory. In short, sour-milk crepes are simply a wonderful way to use up milk that’s gone off :)

Mix eggs, sugar, and salt in a large bowl until the sugar dissolves.

Add one cup of flour and baking soda. Mix.

Add a cup of milk and sunflower oil, mix. Then, while continuing to mix with a whisk or mixer, gradually add the remaining flour and milk to the mixture in small portions.

Heat a pan with a small amount of oil. Pour a little batter onto the hot pan and spread it evenly across the entire surface.

Cook the crepe for about 1 minute on one side.

Turn over.

Cook for about 30 more seconds on the other side, then transfer the finished pancake to a plate. Repeat the baking process until you run out of batter.
