
Suluguni crepes with filling

First, prepare the filling for the crepes. Soak the mushrooms in cold water, then rinse them thoroughly and pat dry. Trim with a knife if necessary. Chop the mushrooms with a knife or in a blender. They should be chopped as finely as possible.

Place a skillet on the stove and heat it over low heat. “Melt” a piece of butter in it. Then add the mushrooms to the skillet, salt them, and sauté until all the liquid they release has evaporated and the mushrooms have taken on a beautiful golden color.

Line a cutting board with plastic wrap. Lay overlapping slices of suluguni cheese on top. When the fried mushrooms have cooled, spread them on the suluguni pancakes and even out the filling.

Now take the plastic wrap by the edge and roll all the pancakes into a tight roll. Make them firm enough that they don’t fall apart. Work as carefully as you can, because suluguni pancakes are a very delicate dish, and the cheese itself can tear easily.

Cut the finished roll of suluguni cheese with mushroom filling into 1–2 cm thick slices. Arrange on a serving platter and serve.
