
Zucchini pancakes with cheese and garlic
Description
These pancakes can be served as a standalone dish, or you can roll any filling inside them. A great filling option is a mashed processed cheese blended with mayonnaise, grated finely on a small grater. You can also add chopped boiled chicken eggs, crab sticks, and other ingredients to this mixture. However, zucchini pancakes are already very tasty and satisfying on their own. I often prepare these pancakes for dinner when I don't particularly feel like a full meal and just want a light snack. These pancakes are even easier to fry than regular pancakes. Thanks to the presence of not only eggs but also cheese in the batter, the pancakes hold their shape well and don't fall apart at all. Serve warm or chilled. Perfect with tea.

Prepare all the necessary ingredients. Choose a young, small zucchini with green skin. The flesh and skin of such zucchinis are the most tender. If your zucchini is older with white skin, it's better to peel it.

Cut the zucchini into random pieces and blend in a blender or process through a meat grinder.

Mix the chopped zucchini with hard cheese grated on a fine grater.

Add salt, eggs, minced garlic (preferably pressed), and mix well.

Now add the flour (start with 3 tablespoons) and mix thoroughly. This is the key to ensuring there are no lumps in the finished pancake batter. Add a few tablespoons of vegetable oil to prevent the pancakes from sticking to the pan while frying. Only at the end pour in the milk, stirring with a spoon or whisk. Do not add all the milk at once—adjust according to the desired consistency. Add more milk or flour as needed. The batter should have the same consistency as regular pancake batter.

Heat a skillet with a drop of vegetable oil. Pour about 100 ml of batter into the skillet (amount depends on the skillet size), spread the batter evenly over the entire surface, and cook for a few minutes on each side.
