Cheese-filled pancakes
Description
The pastry is simple and quick to prepare. For the recipe, I made plain pancakes, but added a pinch of sugar and salt to the batter. I prepared the "Béchamel" sauce following the classic recipe, using salt and nutmeg; the detailed sauce recipe can be found on the website. Choose any cheese you like—I prefer slightly salty ones, but most importantly, the cheese should melt well. Good luck! Serve cooled down or slightly warm.

Step 2

Lay the crepe flat on the table or cutting board. Place a tablespoon of "Béchamel" sauce on it; I had previously cooled it well so that it became thick. Next to it, add a heap of grated cheese.

Step 3

Fold the crepe into a triangle so that the filling is inside.

Melt the butter in a skillet and fry the cheese parcels on both sides until golden brown.
