The baking is simple and quick. Want to make chicken-filled pancakes at home? Perfect, because there's no better breakfast dish. Making these pancakes is not difficult at all—I'd even say it's easier than usual, since we won't be frying them separately and then filling them. In this easy recipe for chicken-filled pancakes, we'll place the filling onto the pancake right after one side has been fried. This method is not only very fast, but also convenient, as the pancake is then sealed, preventing the filling from falling out. The baking is done. Serve at the table.

    Let's start by preparing the batter for the pancakes. We need to put the cottage cheese into a deep bowl, break in the eggs, add salt and sugar, as well as half of the total flour and half of the kefir, then mix everything thoroughly.

    In a separate container, mix the remaining kefir and baking soda, whisk until the mixture begins to foam. Then pour it into the bowl with the dough, add the remaining flour, and mix thoroughly until the dough becomes smooth and uniform.

    Now we cut the chicken fillet, mushrooms, and onion into small cubes. Place everything in a pan with heated vegetable oil and fry over medium heat.

    When the liquid from the meat and mushrooms has almost completely evaporated, add chopped parsley, sour cream, salt, and pepper to the filling to taste, mix everything, and remove the pan from the heat.

    Place another pan on the stove, this time a flat crepe pan. Grease it with oil and heat thoroughly, then pour a couple of spoonfuls of batter onto the pan, spreading it to form a pancake no more than 0.5 cm thick.

    When the pancake is slightly fried on one side, place the filling on one half of it, leaving the edges of the pancake free.
