
Pancakes for children
Description
If desired, you can use any type of milk with any fat content to prepare the dough. For example, if a child has an allergy to cow's milk protein, use goat, coconut, or soy milk. To give the baked goods a rich aroma, add a little vanilla sugar to the dough.

Prepare the listed ingredients. It is advisable to warm the milk to at least room temperature.

Break the chicken eggs into a deep container: a bowl or a plate. Add milk of any kind and fat content, salt, granulated sugar, and vanilla sugar. Whisk thoroughly with a whisk or fork until the sugar is completely dissolved.

Add premium wheat flour. If desired, sift it directly into the container through a sieve. Gently incorporate the flour with careful motions, but do not beat it to avoid lumps forming in the dough. Then pour in the vegetable oil and let the dough rest for 10 minutes to activate the gluten.

Preheat a heavy-bottomed skillet and grease it for the first time with vegetable or butter. Remember, you should grease the pan when it's already hot! Pour in a portion of the prepared batter and rotate the pan to spread the batter evenly, forming a crepe. Cook for 1–2 minutes on each side over medium heat. Do not pour in too much batter to ensure the crepes turn out thin and tender.

Fry the remaining batter in the same way. Place the pancakes on a plate and serve with various sweet accompaniments: syrups, jam, preserves, condensed milk, etc.
