
Pancakes
Description
Making “Bagrir” pancakes is very simple, and all the ingredients you need are always on hand. You can serve these pancakes on their own, but they are best with any sweet topping: jam, honey, preserves, condensed milk, and so on. Because the pancakes are made from foamy batter, they turn out airy and full of tiny holes. It’s best not to make them too large—ideally about the size of a small saucer. It’s impossible not to fall in love with this magical baked treat. You can serve them with tea or coffee.

Prepare all the ingredients.

Combine all dry ingredients: flour, semolina, sugar, salt, baking powder, and yeast.

Add the egg yolks and butter.

Mix everything together and add warm water.

Beat everything until smooth and homogeneous.

Cover the bowl with a towel and leave it in a warm place for 30–40 minutes. The dough should rise well in volume.

Place a non-stick frying pan on the heat (you don’t need to grease it) and as soon as the pan is hot, cook the pancakes. The pancakes are cooked on one side only, so the heat should be low.

As soon as the “magic” holes appear and the top sets, take the pancakes off. While they’re still hot, I don’t recommend stacking them—it’s better to lay them out on a clean towel.
