
Pork cutlets
Description
When prepared properly, pork meatballs, the recipe for which I am happy to share with you, turn out tender and delicious. To prepare this dish, it is important to choose the right meat—preferably from the back of a young pig.

1. Cut the pork across the grain into thin slices. Each slice should be no thicker than one and a half centimeters. To properly tenderize the meat, take a sharp knife and make cuts along the slice, then cut across, creating a grid pattern. Do not pound the meat with a mallet, as it will make the meat less juicy. Season the tenderized meat pieces with pepper and salt.

2. Beat the eggs, add a little salt. You can add a spoonful of sour cream or milk. Mix everything well.

3. Sift the flour and carefully coat the patties in flour. It's better not to use breadcrumbs for breading here.

4. Heat the oil in a skillet, coat the meat in the egg mixture, and fry over low heat until a golden crust forms. Check the meat's doneness with a fork.

5. Place the cooked patties on a paper towel or parchment paper to absorb excess oil. Once the meat has cooled down, transfer the patties to a serving plate. Hot patties may stick together.
