When prepared properly, pork meatballs, the recipe for which I am happy to share with you, turn out tender and delicious. To prepare this dish, it is important to choose the right meat—preferably from the back of a young pig.

To properly tenderize the meat, take a sharp knife and make cuts along the slice, then cut across, creating a grid pattern. Do not pound the meat with a mallet, as it will make the meat less juicy. Season the tenderized meat pieces with pepper and salt.
