
Millet porridge cutlets
Description
To make patties, cook millet in milk with sugar and a pinch of salt. Then let the porridge cool slightly—it should be warm when shaping. It's harder to form patties from cold porridge, as millet solidifies quickly. My version is sweet, perfect for afternoon snack. You can also make savory patties by replacing milk with broth, omitting sugar, and adding herbs.

Prepare the ingredients. Let's get started!

Place milk with sugar and a pinch of salt in a pot, bring to a boil. Rinse the millet well and drain the water. Add the millet to the boiling milk and stir thoroughly. Cook over low heat for 20 minutes, stirring occasionally to prevent burning.

Transfer the millet porridge to a cold bowl and cool until warm.

Divide the porridge into 8 portions. Roll into balls, flatten slightly, and coat in breadcrumbs.

Heat vegetable oil (you can use butter instead) and place the patties in the pan. Fry for a couple of minutes on one side.

Place on a paper towel to remove excess fat.

Serve the patties with sour cream or a scoop of ice cream. Berries are also welcome.
