
Liver cutlets
Description
This is a fairly simple recipe for liver patties, which can also be used for other offal. Moreover, thanks to careful preparation of the ingredients, you can use any kind of liver—it will turn out incredibly tender.

1. The first step in preparation is liver processing. The liver (in this case, pork liver) should be thoroughly rinsed and cut into medium-sized pieces. Place the liver into a deep bowl and cover with cold milk. Let the liver soak for at least 30 minutes.

2. To make liver patties at home juicy and delicious, you need to add vegetables. Peel the onions and carrots and cut them into large pieces.

3. The flavor will be even more interesting if you add mushrooms. They are not a required ingredient, so you can do without them.

4. Drain the liver soaked in milk and mince it together with the vegetables through a meat grinder. If desired, this can be done in a blender.

5. Season the ready mince with salt and pepper to taste. Add spices or herbs if desired (dried or fresh greens). Add the egg and gradually sprinkle in flour to thicken the mince. Mix thoroughly to prevent lumps from forming.

6. Pour a little vegetable oil into a frying pan and heat it up. The classic liver burger recipe does not include breading, so place the minced mixture directly onto the pan using a spoon. Fry on both sides until a crust forms. Then transfer to a paper towel, blot off excess oil, and serve.
