Red fish cutlets

Description

The dish is prepared without unnecessary complications. To make red fish patties, take two kilograms of fresh fish. This can be sturgeon, trout, salmon, or sockeye salmon. Any red fish is suitable for the patties! The special feature of these patties is that we chop the fish fillet by hand instead of mincing it through a meat grinder. This results in a coarse, non-mushy texture. To make the patties tender and juicy, add cream or milk. Use cream with 22% fat content. Serve the finished dish at the table.

    Clean the fish fillet from bones and finely chop. I do not recommend passing the fillet through a meat grinder.

    Finely chop the onion (you can even grate it on a grater). Finely chop the mushrooms and sauté in a small amount of oil until cooked. Season the fish fillet with salt, add spices, chopped onion, and mushrooms. Mix everything. Add mayonnaise to the mixture and let it marinate for about 2 hours.

    Before frying, add grated cheese, cream, and starch, then mix. Let it sit for about 10 minutes. Heat vegetable oil in a skillet and fry the patties on both sides. Since the mince is not very thick, it's better to shape the patties with a spoon rather than by hand.

    There are quite a few patties, they are fluffy (due to the starch) and tender (thanks to the cream).

    It is best to serve ready-made red fish cutlets with vegetables or a light side dish (for example, mashed potatoes). Herbs are also suitable.
