You can choose any cake cream according to your taste. Sponge layers go well with cottage cheese, sour cream, or custard cream. Moreover, what sponge cake is complete without meringue? This recipe has another special touch—fresh cherries, which perfectly complement the sweet cream and add a unique flavor to the cake. Serve with tea or coffee.

1. To make a quick sponge cake, there's no need to beat egg whites and yolks separately. All ingredients are beaten together: 5 eggs, a cup of sugar, a cup of flour, and baking powder. First, beat the eggs with sugar until they turn white.

2. Add the sifted flour at the end, beat everything until smooth. The batter should have the consistency of thick sour cream.

3. Take a baking pan, line the bottom with parchment paper. Then grease the surface with vegetable oil and pour in our batter.

4. It is very important that the dough spreads evenly. Place the pan in the preheated oven and bake for about 25 minutes at 180 degrees.

5. Meanwhile, we start preparing the cream. I always make two types of cream. This time it's custard cream and meringue. First, I prepare the meringue: I beat two egg whites until thick foam forms, while simultaneously cooking the syrup. To make the syrup, pour 4 tablespoons of water over 160g of sugar and boil exactly for 8 minutes. Then, slowly pour the syrup into the egg whites in a thin stream and continue beating for another 10 minutes until the meringue becomes firm. After that, place it in the refrigerator.

6. Now prepare the custard cream: whisk the egg with sugar, add milk and flour. Place over heat and bring to a boil. Cook for 2 minutes, until the cream thickens. Remove from heat, add butter and whisk the cream.

7. Meanwhile, remove the cooled biscuit from the mold and cut it into 3 parts.

8. Spread the first layer with custard cream. Try to make it a thick layer.

9. I decided to add cherries to the cake — a perfect combination with the presented types of cream.

10. Place the pitted cherries on top of the cream and cover with the second layer.

11. Spread the second cake layer with meringue (I do this using a piping bag) and top with the last layer. Now decorate the cake as desired (you can cover it with frosting and decorate with crumbs, make glaze, etc.).
